Vegetable Goulash

Dallen made supper the other night, delicious, so I thought I would share the recipe.

The original recipe is from an Usborne Card Collection called 30 Healthy Things to Cook and Eat, but we adapted it to fit our needs.

1 onion, diced
2 carrots diced
1 medium cauliflower cut into small pieces
2 medium potatoes diced
Olive Oil
1 clove garlic, crushed
2 tbsp paprika
4-6 cups vegetable broth
1- 14 oz can chopped tomatoes
1 tsp basil
1 tsp oregano
S&P to taste

Cook up the onion and carrot in olive oil until onion is translucent. Add everything else except potatoes. Cook for 15-20 minutes until Cauliflower is almost cooked, add potatoes and cook another 5-10 minutes until everything is cooked. Serve hot.
